Cups versus grams: why the same recipe fails twice

A cup measures volume, and flour packs. That single fact explains most baking failures — plus three different cup sizes still in everyday use.

Cooking forgives a great deal. Baking does not, because it is chemistry with ratios — and the most common way those ratios go wrong is not a mistake in following the recipe. It is that a cup of flour is not a fixed quantity of flour.

A cup measures space, not substance

Scoop flour straight from the bag with a measuring cup and you compact it. Spoon it in gently and level it off and you do not. The same cup can hold roughly 120 g or 150 g depending on nothing more than how it was filled — a swing of up to 25%.

In a cake that is the difference between tender and dry. And because the error is invisible — the cup looks full either way — bakers usually blame the oven, the recipe or themselves. A scale removes the variable entirely, which is why every professional kitchen and nearly every European recipe works in grams.

If you must use cups for flour: spoon it into the cup rather than scooping, then level with a straight edge. It will not be exact, but it is far more repeatable than scooping — and repeatable is what lets you adjust a recipe deliberately.

The same word, three different volumes

Even if you measure volume perfectly, "a cup" is ambiguous depending on where the recipe was written:

A metric cup is about 5.7% larger than a US one, and an imperial cup is 20% larger. Follow an Australian recipe with US cups and every ingredient is proportionally short — which sometimes works, since the ratios stay intact, and sometimes does not, because tin size and baking time were set for the larger batch.

The spoon relationships are at least exact

Within US measures, the small units are defined cleanly and worth memorising: 1 cup = 16 tablespoons, 1 tablespoon = 3 teaspoons, 1 cup = 8 fluid ounces. These are exact by definition, so you can always substitute your way out of a missing measure.

Which matters when a recipe asks for ⅜ cup and you own neither a ⅜ nor an ⅛ cup. Six tablespoons is exactly the same thing.

Fluid ounces are not ounces

This one causes real damage. A fluid ounce measures volume; an ounce measures weight. They are not interchangeable, and they only coincide for water by rough accident. Eight fluid ounces of honey weighs about 12 ounces; eight fluid ounces of flour weighs about 4½. A recipe saying "8 oz flour" almost certainly means weight, and measuring 8 fl oz instead gives you nearly double what was intended.

Scaling a recipe

Ingredients scale linearly — find the amount per serving and multiply back up. Going from 4 servings to 6 is a factor of 1.5, so 200 g of flour becomes 300 g. Doubling a 12-portion recipe to 30 is a factor of 2.5, turning 250 g into 625 g.

The parts that do not scale linearly are where scaled recipes go wrong:

  • Baking time. A double-sized cake in a bigger tin bakes longer, but not twice as long. Judge by the cake, not the clock.
  • Tin size. Doubling the mixture and keeping the tin gives you a deep, undercooked middle. Volume must scale with the batter.
  • Salt and strong spices. These often need a slightly lighter hand than the arithmetic suggests, especially when scaling well up.
  • Leavening. Baking powder and soda usually scale directly, but very large batches can need proportionally less.

The single change worth making

Buy a digital scale. It costs less than a couple of failed cakes, removes the packing problem, sidesteps the three-cup ambiguity, and means fewer measuring vessels to wash. Weigh directly into the bowl, zeroing between ingredients, and both the accuracy and the washing up improve at once.
